COOKIE CRUMB GRANOLA
My cookie granola has a satisfying blend of textures and tastes, making it the perfect topping for yogurt, smoothie bowls, or simply enjoyed by the handful as a snack. It's a guilt-free way to satisfy your sweet tooth while still getting a nutritious start to your day. I look forward to this every morning, because it truly is not your normal granola, it is straight up like a reward!!

RECIPE
1/2 cup peanut butter (can sub any nut or seed butter, I recommendloooove sunflower seed butter)
1/2 cup almond butter (can sub any nut or seed butter)
1/2 cup honey
1/2 cup unsweeted coconut flakes
1/4 cup flaxseed meal
2 servings any vanilla protein powder (I love Clean Simple Eats)
2 cups rolled oats, use GF if needed
3/4 tsp salt
1 tsp vanilla extract
1/2 tsp almond extract
1/2 cup mini chocolate chips ( I love Enjoy Life brand)
INSTRUCTIONS
Preheat your oven to 350 F.
Place all ingredients except chocolate chips in a bowl and mix until combined, it may either be a little crumbly or almost like a cookie dough.
Spread or press your granola mixture on a baking sheet lined with parchment paper and bake for 7 minutes, then use a spatula and flip, then bake for another 7-10 minutes based on your desired doneness, it will be golden brown, I sometimes like a darker color for more crunch.
Let cool on the cookie sheet for 15 minutes, then sprinkle on the chocolate chips, they will melt a little bit. After waiting about an hour, you can break apart your granola and put it into an airtight container. Will stay fresh for two weeks. You can freeze for up to two months.
